A Gorgeous Summer Cocktail

Cool off from the summer sun with this recipe for a frozen watermelon margarita.

This gorgeous pink drink—a  frozen watermelon margarita—brings a dose of summer spirit to any gathering and takes just minutes to puree in the blender. Here's how:

1. Remove the rind from half a 10- to 12-pound watermelon (use a cutting board with a rim to catch the juice). Cut the fruit into 1-inch cubes. Put 4 to 5 cups of the cubed watermelon in a gallon-sized plastic bag and place in freezer for a minimum of 2 hours.

2. Meanwhile, squeeze about 1 pound of limes to make a generous 1/2 cup of fresh lime juice.

3. In a blender, combine the frozen watermelon cubes, lime juice, 1/4 cup of Triple Sec, 1 cup (8 oz.) of good-quality tequila, and 1 1/2 cups of ice cubes. Puree until smooth.

4. Taste and add more lime juice or tequila as desired. Serve immediately, garnished with a lime wheel or watermelon wedge. 

Serves 4-6.
